Chicken Drumstick Wrapped in Bacon, Stuffed with Cheese

Been playing masak-masak at home, and loving this recipe :)

2 boneless chicken drumstick (ask your butcher to de-bone it for you)
Some herbs of any kind (I used a cajun spice mix)
Cheese (mozzarella or Parmesan)
Streaky bacon (4 slices)
1 tbps extra virgin olive oil

Rinse and pat dry the chicken. Marinate the chicken with olive oil and spices. Place a few cubes of cheese at the centre, and roll the chicken up, using toothpicks to secure the meat. Wrap the bacon around the chicken, and use more toothpicks to secure if needed. Leave the chicken to marinate for a few hours or overnights.

When you're ready to cook, be sure to bring the chicken out to room temperature first. Pre-heat the overn to 190°CHeat up a skillet with some oil and sear the chicken on both sides for a few minutes, just to brown it a little. Remove the chicken from the skillet and place it into an oven dish, and into the oven to roast for another 15 minutes.

Serves two.
