Pork Patties Stuffed with Cheese

I've been thinking about making pork patties at home, and decided to just do it! Can't be that hard right? And who doesn't love pork patties these days, with all the burger joints sprouting around town like wild mushrooms?

I then decided to make it more adventurous instead: double pork patty stuffed with cheese.

Minced pork (200 to 300 grams)
Minced garlic (2 to 3 cloves)
1/2 tps thyme
1/4 tps white pepper
1/4 tps fish sauce
1/4 tps Worcestershire sauce
1/2 tbps extra virgin olive oil
Cheese slices (I used Parmesan cos that was the only cheese I had in the fridge)

Mix the minced pork with all the ingredients (except the cheese, for obvious reasons). After a good mix, divide the mixture into half, then half again. Using your fingers and palm, form a patty from each mixture. Lay the cheese on one side of the patty, and top it with another patty. Be sure to seal the sides to avoid the cheese melting out. Let the patty marinate a few hours or overnight.

Pre-heat the overn to 190°C, and heat up your skillet with a bit of olive oil Sear both sides of the patty to brown them a little, then pop them in the oven to cook for another 15mins, or until patty is fully cook. Serve with burger buns or a side of salad, or both.

I made a mistake by not using egg white in the mixture, hence during the cooking process, some of the cheese had oozed out, and I kinda felt the patty was a tad dry, not as moist as I had wanted it to be. Maybe because I had left the patty in the oven for too long as well (timer was set at 20mins, not 15mins). Will definitely try to make them again.
